My Summer RE/SHAPE Soup

Soup, it’s the ultimate cozy feel good meal. 

Here’s my summer weekend RE/SHAPE  recipe. 

4 large organic zucchini 
2 large organic yellow squash 
3 large organic leeks 
1 medium size organic sweet onion 
1 box organic vegetable broth 
1 tbs garlic 
olive oil, organic ghee, Himalayan salt, pepper 

Sauté your garlic, onion, leeks, zucchini and squash in a table spoon of olive oil and table spoon of ghee. Add half tsp of salt and and half tsp of pepper. Sauté on medium/low until leeks are translucent and the zucchini/squash is cooked through. 

Place entire mixture into blender, add box of vegetable broth. Blend until smooth and color turns a beautiful light green. 

Add a finishing touch of any finely chopped fresh herbs and a sprinkle of paprika. 

Light and delicious!  
Zucchini Zucchini is packed with many important vitamins, minerals, and antioxidants. It has a high fiber content and a low calorie count.  Zucchini is brimming with vitamin C, potassium and magnesium and folate.
Yellow Squash High in vitamins A, B6, and C, folate, magnesium, fiber, riboflavin, phosphorus, and potassium, also rich in manganese.
Leeks Leeks protect your heart’s health, increases the strength of your immune system, vital for the health of nervous system, improves your vision, helps lower blood pressure, improves digestion.
